600grm Fish 鱼
100grm Corn flour( For coating) 玉米粉
2 nos Eggs 蛋
Marinate: Ingredient A
1 tsp Salt 盐
1 tsp Pepper 胡椒粉
1 1/2 tsp Sesame Oil 麻油
2 1/2 tsp Sugar 糖
Special Sauce:
6 nos Kalaimasi
4 tsp Thai Sauce
2 Tbsp Plum Sauce
1 1/2 Tbsp Sugar
2 pcs Chili Padi
1 pcs Red Chili
Kerabu: ( Mix Well)
1/2 no Shred carrot
1/2 no Onion
2 Spring Coriander leave
1 no Red Chili
Method:
1. Marinate fish with ingredient A for 2 hour.
2. Rub in the corn flour and than dip in eggs.
3. Fried fish in hot till cooker and pour special sauce and kerabu.

Ingredient :
2 nos Sea Cucumber (cut into bite side)海参
8 nos Black mushrooms(cut into 4 piece)香菇
1/2 no Carrot slices红萝卜切片
2 pcs Red chilies cut into piece红辣椒切片
2 stalks Spring Onion cut into 3cm洋葱切3公分
8 slices Ginger姜
1 Tbsp Chop Garlic蒜米
Seasoning :
300 ml Water 水
1/2 tsp Salt 盐
1 1/2 Tbsp Oyster sauce 蚝油
1 Tbsp Sugar 糖
1 1/2 Tbsp Chinese wine 绍兴酒
1 1/2 Tbsp Black soya sauce 黑酱油
2 tsp Seed sesame oil 麻油
For thickening : 1 Tbsp corn flour + 2 Tbsp water
Method :
1. Heat wok with 1 Tbsp oil fry garlic , ginger , and than add sea coconut.
2. All the rest of the ingredients & seasoning & simmer for stew about 15minutes.
3. Thicken with corn flour mixture & serve hot.

800 grm Beef top grade-Cubes上等牛肉
1 tsp Kee Chee拘子
5 Slices Tong Kwei当归
6 pcs Tong Sum党参
50 grm Carrot – Cubes萝卜块
6 nos Red Dates红枣
5 nos Garlic 蒜米
6 nos Black mushroom香菇
4 Slices Ginger姜
1 Stalk Spring Onion洋葱卷
1 no Onion 洋葱
Seasoning :
600 ml Water水
1/2 tsp Salt盐
1 tsp Oyster sauce蚝油
1 tsp Sugar糖
1 tsp Soya sauce酱油
1 tsp Sesame seed oil麻油
1 tsp Chinese wine绍兴酒
1 tsp Pepper胡椒粉
1 Tbsp Cooking oil食油
1 1/2 tsp Corn flour + 3 tsp water玉米粉+3匙水
Method :
1. Boil the beef for about 10 minutes
2. Heat the Pressure Cooker with oil & fry garlic
3. Add the rest of the ingredient seasoning simmer for about 45 minutes.
4. Thicken with corn flour mixture.

300 grm Prawn虾
1 Tbsp Chop Garlic蒜米(切粹)
Ingredient : B
50 grm Carrot ( Slices)萝卜(切片)
4 nos Baby Sweet Corn幼玉蜀黍
10 nos Gingko杏仁
1 no Red Chilies红辣椒
3 nos Black Mushrooms香菇
6 nos Honey Bean甜豆
5 g Fatt Choy发菜
Seasoning :
200 ml Water水
1/2 tsp Salt盐
1 tsp Sesame Oil麻油
1 1/2 Tbsp Oyster Sauce蚝油
1/2 Tbsp Chinese wine绍兴酒
1/2 Tbsp Soya Sauce酱青
1/2 tsp Pepper胡椒粉
1 Tbsp Cooking Oil食油
1 Tbsp Corn Flour玉米粉
2 Tbsp Water水
Method :
1. Heat wok 1 Tbsp oil fried garlic till frangant add prawn stir well.
2. And than add all ingredient B just stir well & add seasoning. Bring to boil and thicken mixture.
5. 金玉满堂(Steam Style Preserved Rice)
Ingredients :
3 cup Rice白米
3 cup Water水
1 Preserved Duck Leg腊鸭腿
100grm Chinese Sausage腊肠
4 nos Black Mushrooms 香菇
100grm Mix Vegetable杂菜
2 Tbsp Chop Garlic蒜米(切粹)
50 grm Chop Salted Prawn虾米
Seasoning :
1 Tbsp Oyster Sauce蚝油
1 Tbsb Sugar糖
1 1/2 Tbsp Soya Sauce酱油
1/2 Tbsp Seed Sesame Oil麻油
1 tsp Pepper胡椒粉
1/2 Tbsp Black Soya Sauce黑酱油
Method :
1. Steam all preserved ingredient for about 30 minute. Cut into 15 cm thick Slices.
2. Heat up oil fried chop garlic , salted prawn till fragrant & add all remaining ingredient stir well & seasoning.
3. Steam for 1 minute till cooked.
